How do you get your scones so light and fluffy?
One of the most frequently asked questions at Devon Pixies
For me, I use the lemonade scone recipe - it never fails! BUT the other 'secret' is in the handling or lack of. The more you handle or pound the dough, the harder and flatter your scones will be. Treat your scone dough lightly and you will be rewarded with light and fluffy scones.
I could get all technical with oven temperature, placement and cooking time. But I won't.
Personally, I prefer my scones to come out of the oven when they are just start to go golden on the top, others prefer a more crispy bake. However, this is when you find your scones will be heading towards the biscuit end of texture.
The other frequently asked question is jam or cream first and that is a whole other story!! Just ask a Cornish person or Devonian :)
This year has just flown by and so many new things to come along!
I have been really pleased to present our new tea range to you courtesy of Moose Teas - we now have our own exclusive Devon Pixies blend (Ceylon based) and it matches perfectly for a high tea menu. Coming into summer these teas are great Iced. There will be a daily selection available over these warmer months. Our menu's will also be having a update ready for 2019, keep your news feeds refreshed for our new menu options.
What has been fabulous about this year already? I have loved welcoming all the birthday, baby, and bridal celebrations plus all the 'lets get together parties' that happen throughout the weeks. Each of the school holidays, we have added an activity to the children's high tea menu - cupcake decorating, edible slime making, biscuit making and decorating. There will be a post Christmas holiday activity as well - announcement coming soon.
I will be closed over Christmas from the 22nd December 2018 through until the 5th January 2019. This gives me some very precious time with my family and allows us to enjoy the holiday season. During the rest of the holidays, you will most likely see my daughter helping out because she likes to earn the extra pocket money.

Well that was a very fast three years!! I find it hard to believe that I have written any proper updates since then!
What's been happening?
I have been keeping very busy in updating menu's, making little changes here and there, and even found time to put a new coat of paint in the front and side rooms. I have trained up some core team members and had a couple of school trainee's come through to complete their Cert III in Hospitality.
The school holiday high tea's have been become a regular and popular fixture (it must have been a good idea as I have seen other tea houses and cafe's take it up as well!). Our children's birthday parties have been gaining plenty of momentum and the girls (and parents) love them. Who doesn't love getting dressed up for an elegant high tea.
This year, I am preparing my side rooms for use as private function and seminar spaces and they are nearly complete. They are used for our palm readings, angel cards, and numerology as well. Another addition to our functions has been the very popular Flower Reading Party nights (the next one is May 23rd).
I have found that my gluten free caramel slice has been the most popular sweet treat, and I try to make it available fairly often, although I do like to mix it up a little with different options. My cupcakes are made from scratch and I have found a fantastic vegan chocolate cake recipe - you couldn't even tell the difference between the regular recipe and this one.
Most of all over the past three years, I have enjoyed looking after you, my guests! All the celebrations and catch ups. There are many babies, upcoming weddings, and birthdays that you have shared with me and you all leave a warm glow in my heart. I am now looking to extend our services into weddings - hire our venue and grounds and I will use my 2 decades of event planning and management to help you get the wedding that you want for an affordable price.
My daughter, who is now eight, loves to come in on school holidays and earn some pocket money by helping with setting and clearing tables, plus serving small pots of tea and taking out the scones. She also delights in being in charge of the craft sessions and cake decorating with the other children.

It seems a while ago now since Easter and the school holidays and Mother's Day is fading into the memory. I do hope that you had an enjoyable Mother's Day with your loved ones.
The school holiday children's high tea was very well received with the children having a great time decorating their cupcakes. We had ages range from 4 up to 16 and there were some truly creative works of art.
Well February just flew by with some beautiful baby showers, bridal parties, birthdays and other celebrations. I feel well and truly settled in the kitchen and have enjoyed trying out some new menu ideas.
February Event Wrap Up
The first Tea and Tarot morning / afternoon tea was a great success with Dawn Alice with rave reviews so we have put up the next date to be Thursday 19th March, starting at 10am. There are 3 readings booked per hour so your cream tea booking times are spaced to accommodate the reading times.
Our first Make and Take craft afternoon was very informative and fun for those that attended, however due to a calamity of plumbing disasters, illness and unexpected other commitments, the numbers were very low. In view of this, prepayment for the craft portion of the day is required to confirm your booking. We are looking at the next date to be in the Easter school holidays - bring the children or grandchildren (ages 6 and up). They'll learn a new skill and get to take home their handiwork.
New products and menu options
The chocolate eclairs have well and truly been a hit in the Deluxe Tea menu, so they are here to stay. They can be adapted with a custard filling, have a vanilla icing instead of chocolate. I haven't perfected the gluten free version yet.
Which brings me to dietary intolerances and menu choices. I have just added a menu option that will cater for the main concerns of gluten gree and lactose free choices and this can be refined further for individual needs. Please do note that I am not a nutritionist or food specialist and can only follow recipe recommendations, however if you know specific foods that you can or cannot eat, I can work around or with them. Some specialist items may incur an additional cost.
Are you having a celebration in the workplace or need cakes for a school /daycare birthday? Order your cakes with Devon Pixies and save the day. Large cupcakes are 6 for $12 and come in chocolate mud, vanilla sponge or red velvet and are decorated with buttercream in the colour of your choice. Mini cupcakes are 12 for $15 and come in the same flavour selections as the large cupcakes. Orders are to be paid at time of booking, 24 hours notice required and ready for pick up from Devon Pixies on the day from 9am. All ingredients will be listed on the box (especially for school / daycare orders).
We are welcoming Dawn Alice back on the 19th of March for Tea and Tarot, cost is $25 per person and includes your cream tea and a private 15 minute reading. Bookings are essential to coordinate readings.
A Downton Afternoon Tea is being held on Saturday 28th March at 3pm. We are very excited to announce The Brisbane Classics Club will be performing a musical repertoire of the era for your enjoyment. Bookings are essential and are available via Eventbrite. Seats are limited to 40, so don't leave it to the last minute to book.

Group booking and refund policy - I love to look after all groups but I do ask that groups and parties prepay three days prior to arrival. I can process your payments via credit card or provide bank transfer details. I ask for this to ensure your confirmed numbers and I also believe that it makes it much easier on the day for you as guests, as you can relax and enjoy the party.
I will provide full refunds for any cancellations up to 48 hours prior to arrival, 50% refund within 24 hours up to the day of. Any cancellation on the day of the event forfeit any refunds. This refund policy also applies to special diary events.
Thank you for the warm welcome and great start to 2015 at Devon Pixies. There is such a positive vibe about the future, it's very exciting.
Firstly an update with the opening hours: Devon Pixies is open Tuesday through to Saturday from 10am until 3pm, you are welcome to drop in for a Cream Tea (scones, tea / coffee) at anytime during these hours, although if you are a group over six, please do call ahead so that I can get the scones in the oven! High Tea's and Deluxe Tea's still need to be booked at least one day in advance. Special diets can be catered for with sufficient notice (at least two days). Devon Pixies is also available for private bookings over 10 people on Friday and Saturday evenings and Sunday (daytime only).
The menu formats will remain the same but I am having fun in the kitchen so there may be some new tasty treats that make their way onto the menu selections.
Bridal showers, Baby Showers, Birthdays and all other celebrations are welcome to sit, relax and enjoy. Childrens' parties are also welcome but best for the over 6yo's. Parents with toddlers are advised that there many low shelves with lots of china and the rooms are not suitable for this age group.

Make and Take Afternoon - Saturday 28th February - a Card Make and Take afternoon with Cream Tea. Kirrileigh Cards will help you create your own card to takeaway after enjoying a Cream Tea of scones, jam, cream with tea or coffee. Bookings are essential and numbers are limited to 30. Cost is $19pp. Please email email@example.com for more details. Prepayment 7 days prior to the event is required to confirm your booking and final numbers.
A Downton Abbey Afternoon Tea - Saturday 28th March, 3pm. For all the fans of this iconic program, it's time to recreate the experience (without the period furniture, unfortunately). Afternoon tea will be a variation of the Devon Pixies high tea and include a selection of dainty sandwiches, scones and cakes from the era of the first episode (1912). Dressing up is encouraged. Cost $32pp, bookings are essential and numbers are limited to 40. Please email firstname.lastname@example.org for more details or to make your booking. Prepayment 7 days prior to the event is required to confirm your booking and final numbers.
ANZAC Day - Saturday 25th April. Devon Pixies will be helping out the Logan Village RSL on the tea stand after the March, come and say hello.
These are a few of the events planned for this year, however, if minimum numbers aren't reached (50% capacity), the event will be cancelled and any deposits paid will be refunded.

On Saturday 22nd December, Devon Pixies celebrated the last Mummy and Me for the year with what has turned out to be the theme of the year - FROZEN!! 'Let it go!' I hear you all say!! However, it was a lovely afternoon with plenty of Elsa's, a Christof and a couple of Ana's. The little ladies and gentlemen were all amazed by their beautiful plates of fairy bread, biscuits and cupcake and a BLUE drink. Their tea was completed with mini triangle ham sandwiches, mini scones with jam & cream and a lolly selection. Mum's, aunts and grandparents were able to sit and relax while showing their children how ladies take tea. I know that I had a great afternoon and so did my daughter.
The best part of the day for many little guests was the surprise arrival of none other than ANA and ELSA, everyone had their photo taken with the ladies and a chance to have a chat with these characters come to life. Many thanks to Lou Lou's Fashion Hire Service for providing the models and costumes.
This was also the day that the founding owner, Doreen, said farewell to Devon Pixies after three years. Doreen had the inspiration to provide a beautiful setting for ladies high teas and Pixies has gone from strength to strength. As the new proprietor, I am proud to have the opportunity to continue the traditions of a warm welcome, good times and great food. I wish Doreen all the best in her new adventure and I hope to meet you - guests past, present and future - in 2015.
Devon Pixies will be closed over the Christmas and New Year period from Sunday 21st December until Monday 12th January. Bookings welcome from Tuesday 13th January.
